First, prepare the Minangkabau Spice Paste (Bumbu Gulai) by grinding all the ingredients to form a fine paste with a mortar and pestle. Next, heat the oil in a wok and add the spice paste, cook until aromatic.

Now, add the chicken pieces and stir thoroughly to coat with the spice paste. Afterward, add the coconut milk, turmeric leaf, kaffir lime leaves, lemongrass, and bay leaves. Mix and bring to a simmer for around 30 minutes or until the chicken is fully cooked.

Finally, add the tamarind juice, salt, and sugar to taste. Stir well and cook for another 5-10 minutes. Your Gulai Ayam Minang is ready to be served!

This dish is perfect to serve with steamed rice or lontong (rice cakes). You can also garnish it with sliced chili, coriander leaves and serve with a side of acar (pickled vegetables).
